The South Beach Diet was created in Miami, Florida by a cardiologist named Arthur Agatston. Agatston makes the distinction between good carbohydrates and bad carbohydrates. His theory is that bad carbohydrates promote insulin resistance, and therefore create an inability for the body to metabolize sugar (this includes fat) in appropriate ways.
